Kaffir Lime leaves and Chilli are combined with Ginger for a vibrant and punchy flavour. Yes it’s a little spicy! A versatile flavour that will compliment many seafood, meat, vegetable, rice/noodle dishes and salads.

Marinated & Grilled Fish/Chicken/Tofu with Ginger, Lime & Chilli Flavour Pearls

What you’ll need

Marinade

  • 1/4 cup Soy
  • 3 tbs Rice Vinegar
  • 1 Tbs Sesame Oil
  • 1 Tbs Honey or Maple Syrup
  • Garlic – 1 or 2 cloves crushed
  • Coriander – around 1/4 cup washed & roughly chopped
  • Oil – to grill & Stir fry

Pick your Protein…one per person

  • Fish Cutlet – Salmon or White Fish is great and very easy to handle when grilling
  • Chicken Thigh Fillet – skin on or off is fine
  • Tofu – Block Firm Tofu. Cut in 1/2, microwave for 2 mins then press for 10 minutes to release some liquid. It’s easier to grill then 🙂

Stir fry

  • Garlic – crush one clove
  • Ginger – grate a small knob
  • Shitake Mushroom – slice 1 per person
  • Bok Choy – trim & wash
  • Bean Shoots – a handful
  • Sesame Seeds

To Finish

  • Ginger, Lime & Chilli Flavour Pearls
  • Lime 1/2 or wedge

 

To do

Lets marinate our protein first. I’ve been known to marinate for only 20 minutes because that’s all time allowed and it was still delicious but a couple of hours or overnight is best if you’re more organized that me!

Simply combine the Soy, Rice Vinegar, Sesame Oil, Maple or Honey with the crushed Garlic and Coriander in a bowl. Add your chosen protein. (Zip lock bags are excellent for storing marinating foods too)

Refrigerate until ready to grill.

Next

Get your stir fry vegetables prepared and ready. Keep them all separate as they will be added to the wok/pan at different intervals.

To serve

Get your grill nice and hot.

Remove your protein from the marinade and pat dry a little. Lightly oil then place on the grill.

Pop your wok/pan on the stove to heat up.

Add a splash of oil then your Ginger & Garlic to the hot wok. Next in the Shitake. Give a quick stir around for a minute or two. Add the Bok Choy and stir fry until slightly wilted. Lastly adding the Bean shoots off the heat.

Keep an eye on the grill whilst stir frying. You don’t want to burn dinner!

Once your chosen protein is cooked, pop it directly on to your plate and pile up some of your beautiful stir fry next to it. Add a little Sesame Seed sprinkle and lastly a spoonful of Ginger, Lime & Chilli Flavour Pearls to finish.

Best served with something chilled and someone fun to share it with 🥂
