Anzac Biscuits for Anzac Day

Chewy or crunchy, Anzac biscuits are a nostalgic Aussie treat so why not give this recipe a go for your Anzac Day celebrations this year?

You will need:

  • 1 1/4 cups plain flour, sifted
  • 1 cup rolled oats
  • 1/2 cup caster sugar
  • 3/4 cup desiccated coconut
  • 150g unsalted butter, chopped
  • 2 tbsp golden syrup or treacle
  • 1 1/2 tbsp water
  • 1/2 tsp  bicarbonate soda

Let’s get baking!

Method: 

  1. Preheat your oven to 170 degrees celsius. To prepare, line some baking trays with non-stick baking paper and set aside for later. In a large bowl place the oats, flour, sugar and coconut and stir to combine with a wooden spoon.
  2. Next, place a small saucepan over a low heat on your cooktop and melt the butter and golden syrup, stirring to combine and until the butter has completely melted. Mix together the bicarb soda with 1 ½ tablespoons of water, then add this to the saucepan. As you stir this mixture it’ll start to bubble so remove it from the heat.
  3. Combine the wet and dry ingredients together in the large bowl and mix together until the mixture is combined.
  4. Grab a tablespoon and use this to grab bits of the mixture and roll into balls. Place the balls onto the baking trays spaced 2cm apart, pressing down on the tops of the balls to flatten slightly.
  5. Place the trays in the oven and bake for 12 minutes or until golden brown.
