Coolibah Honey

Coolibah honey is a unique and distinctly Australian honey made from the nectar of the Coolibah tree ( waltzing matilda), which grows in arid inland regions of NSW especially near riverbeds. It typically has a smooth, balanced flavor—not too sweet, with slightly fruity notes. (Think apple/pear undertones).

Coolibah honey pairs well with both savory and sweet foods thanks to its mild, earthy flavor. Here are some great matches:

  • Soft cheeses – like camembert, cream cheese, or feta

  • Herbal teas – such as lemon myrtle, rooibos, or lemongrass

  • Grilled vegetables – especially zucchini, eggplant, and capsicum

  • Chicken or duck – as part of a glaze or marinade

  • Fresh fruit – apples, melons, and stone fruits like apricots or peaches

  • Porridge or granola – for a warm, lightly sweet breakfast

  • Light baked goods – muffins, scones, or honey cakes

Its smoothness also makes it lovely in homemade dressings or to balance spicy sauces.

Pure natural honey can sometimes crystallise due to the fructose in the flora. To reverse the crystallisation, simply place the jar in a hot water bath.
