Lots of people who came into the shop over the June long weekend sampled our Fruit Butter Mousse Tarts and asked for the recipe. Over the 3 days we did 3 different varieties which shows the versatility of the recipe, so here it is!


1/4 cup icing sugar mixture

1/2 cup Mrs Oldbucks Pantry Passionfruit Butter

1 cup thickened cream

1/2 – 1 teaspoon lemon juice ( depending on taste)


Chill mixing bowl and beaters in fridge for 30 minutes before starting.

Put icing sugar, passionfruit butter, and thickened cream into the bowl

Beat until cream has thickened and mixture is light.

Add lemon juice to taste

Chill  mixture in fridge for at least an hour ( preferably overnight ) before serving.

Mousse can be served in individual pastry cases , as a basis for a tart, by itself in a dessert bowl with fresh berries the choice is yours. A quick but delicious dessert.
