A true taste of the Southern Highlands, our Highlands Mixed Native Honey is gathered from hives located on a biodynamic farm in Colo Vale, one of the region’s charming northern villages. The bees forage among the varied native blossoms of the surrounding countryside, creating a richly coloured honey with a smooth texture, generous natural sweetness and distinctive floral character. As the seasons and flowering gums change, each harvest carries its own subtle expression of the local landscape. Delicious spread over warm toast or crumpets, drizzled through yoghurt and porridge, paired with cheese or used to add natural sweetness to dressings, marinades and baking. Pure natural honey can sometimes crystallise due to the fructose in the flora. To reverse the crystallisation, simply place the jar in a hot water bath.
